Overview
Sin Guo Red Beancurd, also known as nan ru in Chinese and lam yu in Cantonese, consists of square pieces of beancurd, fermented and preserved in rice wine. Red yeast rice provides the dark red colour and alcoholic flavour. It distinctively thickens flavour and aroma of meat dishes. A small quantity makes a perfect marinade for red meat and chicken, famously, crispy and braised pork belly.
